Cut up the cantaloupe.
Slice the olives in half. Cut the feta cheese into cubes.
Place the cantaloupe, the olives and the rucola in a mixing bowl.
Put the quince vinegar in a closeable jar. Add a pinch of salt, wait until the salt dissolves. Add the oils, the mustard and the freshly ground pepper. Close the jar and shake its content thoroughly.
