Granola is similar to muesli except that its cereals are baked, which lends them a more characteristic, more luscious taste. The homemade omega-3 granola is rich in flax seed flakes, chia seeds and its basic ingredient: oat flakes. You can also mix some dried fruits into the baked seed mix. The portion given here is sufficient for one week. Two heaped tablespoons equal one portion, which you can mix into your daily yoghurt, kefir, milk or some dairy substitutes.
Mix the molasses cane sugar with the egg white and the two spoonfuls of walnut oil. In a mixing bowl, mix the oat flakes, the flax seed flakes, the buckwheat flakes, the crushed walnuts and the chia seeds plus a pinch of salt and the vanilla grist. Mix the cereals with the wet ingredients.
Line a baking tin with silicone baking paper and spread the wet crumbles on it. Bake it in an oven at 170 °C for 25 minutes, tossing it two or three times. Cool it and then mix in the dry fruits to your liking.
